Chefs At Home – Kat’s Recipe

Hi! I’m Kat. Red Olive’s Comis Chef and pastry Queen (not a self appointed title, may I add!) 

When at home I don’t stray too far from the oven – creating cakes for my friends, family and work colleagues. Although, I must admit my guilty pleasure is definitely a Domino’s pizza covered in Goats Cheese, Caramelized Onions and Mozzarella. Yum! I have worked at Red Olive for 3 years now and in that time I have really grown in confidence. From the timid work experience girl that I started as, to completing my Apprenticeship and then winning a Bronze award at Hotel Olympia. When I’m not at work you will probably find me in Cafe Bean or The Docks Eatery, Derby – you NEED to try their flat breads! 

After putting myself forward to be the first of our team to welcome you in to my kitchen, I decided to do a Vegetarian friendly meal. Although I am not veggie myself, my little sister, Baby Harris, is.  

With that in mind, my “Chef’s Top Tip” would be to add crispy Pancetta to the top of this, for you Carnivores, like me!
